Benvenuti

Giancarlo Perbellini’s “Benvenuto” to the table goes beyond a simple introduction to the meal. They are “samples” offered as true courses, but smaller sizes because they are served as the start of the meal, and reflect the style of the chef. One of the most symbolic “welcomes” is smoked caviar and iced zabaglione; as an alternative it is served with passionfruit.
